M: "Being inside the Spieker is at its most enjoyable in winter, when storm winds sweep across the lake and moan and whistle in the chimney. That's a good time to be sitting under the overmantel, by the crackling fire with a foaming mulled brew. In summer, many prefer to spend their time in the grain loft with its wonderful view out over the lake."

F: Heinrich Sandstede, one of the founding members of the Open Air Museum, describing the Spieker roughly 100 years ago. And you can well imagine how Sandstede and fellow members of the Local History Society sat around a blazing fire in winter and simply enjoyed the ambiance. A ceiling of massive, dark timber beams above and a handsome stone floor below, with a counter resting on great oak barrels – even now, the public bar has a cosy informal atmosphere.

M: As guests, you sit in traditional rush chairs and dine at tables of solid wood, while serving staff in regional costume introduce you to traditional Ammerland table manners.

F: A typical local beverage was a "Heetsööt" – "Hot and Sweet" beer mixed with sugar and then mulled and served here in the Spieker from traditional pewter tankards. But that was a long time ago.
