Station: [8] Bain Marie Still with Pistorius Vessel and Plate Cooler


 

M: This still, which was in operation until 1961 at the Haug distillery in Stuttgart-Obertürkheim, combines a Bain Marie with a Pistorius vessel and a plate cooler.

The Bain Marie kettle holds around 550 litres, roughly 120 gallons. The spirituous steam is piped into the Pistorius vessels, where the alcohol content continues to increase. A three-way tap allows the steam to be piped straight to the plate cooler if necessary.

In a Bain Marie still, the hot combustion gases are piped into a coil surrounding the iron Bain Marie vessel. The copper pot chamber is suspended inside the vessel. The heat is transferred so evenly and gently that the mash can't become scorched.
